The gateau (Italian gattò) of potatoes is a typical dish of southern Italy specially of Campanian cuisine.
According to the narration this dish was invented in 1768 for the Queen Maria Carolina’s wedding. The sovereign had brought the French chefs in Naples to make them cook some of French dishes.
Nevertheless the gattò is to be considered a real recipe of Neapolitan cuisine.
Here comes this delicious recipe … tasty and appreciated even by children.
Ingredients:
- 35.2 oz of potatoes
- 1 egg
- 1.4 oz of butter
- 5.2 oz of of ham
- 7 oz of provolone cheese
- 1.7 oz parmesan cheese
- breadcrumbs as need
- salt to taste
- oil as need
Directions:
- Wash and boil the potatoes.
- When the potatoes are cooked, peel and mash them in such a way as to obtain a puree of potatoes.
- Combine butter, Parmesan, egg, salt and mix well.
- In a baking dish sprinkle the breadcrumbs on the bottom and form the first layer of potatoes.
- Add ham and provolone.
- Cover everything with the second layer of potatoes.
- Sprinkle breadcrumbs and add a drizzle of oil.
- Bake for 40 min. to 400 ° F

Il gateau (italianizzato gattò) di patate è un piatto tipico della cucina del sud specialmente della cucina campana. Il temrina in francese significa torta mentre in italiano sformato.
Secondo le narrazione questo piatto fu inventato nel 1768 per le nozze della regina Maria Carolina. La sovrana aveva portato dei cuochi francesi a Napoli per farli cucinare delle prelibatezze della cucina d’oltalpe.
Nonostante ciò il gattò è da ritenersi una vera e propria ricetta della cucina partenopea.
Ecco a voi questa buonissima ricetta…gustosa e apprezzata anche dai bambini.
Ingredienti:
- 1 kg di patate
- 1 uovo
- 40g di burro
- 150g di prosciutto cotto
- 200g di provolone
- 50g di parmigiano
- pangrattato q.b.
- sale q.b.
- olio q.b
Procedimento:
- Lavare e lessare le patate.
- Quando sono cotte levare la buccia e schiacciarle in modo tale da ottenere una purea di patate.
- Aggiungere il burro, il parmiggiano, l’uovo, il sale e mescolare il tutto.
- In una teglia da forno mettere del pangrattato sul fondo e formare il primo strato di patate.
- Aggiungere il prosciutto e il provolone.
- Coprire il tutto col secondo strato di patate.
- Cospargere il gattò con il pangrattato e un filo d’olio.
- Infornare per 40 min. a 200°C
